Description

Perfect for a summer lunch or easy dinner on a hot summer night. Can be made ahead and chilled. A great match for the Pinot Noir

Ingredients

  • 1 pk Smoked salmon (Wildcatch is best it is thick and flakes nicely)
  • 4 oz Goat Cheese
  • 16 oz Bag of Arugala (can substitute with baby Spinach)
  • 1⁄2 lb Pasta, of your choosing
  • Good extra Virgin Olive Oil
  • Salt and pepper

Instructions

Bring pasta to a boil, cook until aldente. Transfer to serving bowl, drizzle with olive oil until lightly coasted. Add uncooked arugala to warm pasta, toss. Flake the salmon and goat cheese over the pasta, toss. Salt and pepper to taste. Can be chilled or served at room temperature.
